New to Gioia, Fortress BBQ brings regional flavors from NC, TX, CA, and KC with dishes like Saint Louis pork ribs, brisket, pulled pork, pork steak—and sweet endings like peanut butter pie and banana pudding.

About Your Hosts

Josh Hudson, an award-winning singer-songwriter from the rural mountains of Casar, North Carolina, has written over 350 songs and recorded four studio albums. A three-time winner of the Don Gibson Singer-Songwriter Award, Josh’s soulful delivery and vivid storytelling shine in every performance. His latest release, That’s Why We Stand, honoring our military, is steadily climbing the charts, showcasing the heart and authenticity of real country and roots music.

Fortress BBQ Mobile monolith creating regional BBQ from NC, TX, CA, KC in the Triad-area NC. Trained by the best in the business, Pitmaster Adam Harvey is ready to serve up craft BBQ unrivaled in the area. From brisket to Saint Lewis pork ribs to Pulled pork and pork steak, they have a delight for every carnivore. To finish with a little something sweet, try their peanut butter pie or banana pudding!
